Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Butterfly the chicken breasts by slicing them horizontally, then season the insides with salt and pepper.
  3. Stuff the chicken pockets with sliced apples and brie, then fold the chicken closed.
  4. Bake the stuffed chicken for 25 to 30 minutes until golden-brown and reaching an internal temperature of 165°F (74°C).
  5. In the meantime, combine the glaze ingredients in a skillet and simmer for 12 to 15 minutes until thickened.
  6. Brush the thickened glaze over the baked chicken breasts.
  7. Broil the glazed chicken for 10 to 12 minutes until caramelized.
  8. Allow the chicken to rest for a few minutes, then drizzle with any remaining glaze before serving.
