Step-by-Step Instructions
  1. In a medium saucepan, bring 2 cups of apple cider to a boil over medium-high heat. Reduce the heat to low and let it simmer for about 20-30 minutes until reduced by half.
  2. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  3. In a large mixing bowl, beat ½ cup of softened butter and 1 cup of brown sugar until light and fluffy. Add 1 egg and 1 teaspoon of vanilla extract and mix until combined.
  4. Stir the cooled, reduced apple cider into the wet mixture. In a separate bowl, whisk together 2 cups of flour, 1 tablespoon of apple pie spice, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and bake for approximately 50 minutes until golden brown.
  6. Allow the bread to cool in the pan for about 15 minutes, then transfer to a cooling rack. Brush with ¼ cup of melted butter and sprinkle with ½ cup sugar mixed with 1 tablespoon cinnamon. Let it rest for about 1 hour before slicing.
