- In a medium saucepan, bring 2 cups of apple cider to a boil over medium-high heat. Reduce the heat to low and let it simmer for about 20-30 minutes until reduced by half.
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, beat ½ cup of softened butter and 1 cup of brown sugar until light and fluffy. Add 1 egg and 1 teaspoon of vanilla extract and mix until combined.
- Stir the cooled, reduced apple cider into the wet mixture. In a separate bowl, whisk together 2 cups of flour, 1 tablespoon of apple pie spice, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt. Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and bake for approximately 50 minutes until golden brown.
- Allow the bread to cool in the pan for about 15 minutes, then transfer to a cooling rack. Brush with ¼ cup of melted butter and sprinkle with ½ cup sugar mixed with 1 tablespoon cinnamon. Let it rest for about 1 hour before slicing.
