  • 1 Lemon zest and juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
For the Pastry
  • 1 package Phyllo Pastry 16 oz, thawed
  • 1/2 cup Melted Butter or Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather all necessary equipment.
  2. In a skillet, sauté the onion and garlic in olive oil for 4–5 minutes until soft.
  3. Add the fresh spinach and cook for an additional 2–3 minutes until wilted, then cool slightly.
  4. Mix cooled spinach with feta, ricotta, parsley, dill, lemon zest, lemon juice, salt, and pepper.
  5. Unroll phyllo pastry sheets, covering with a damp cloth, and brush the first sheet with melted butter.
  6. Layer three sheets and spoon filling along one edge, fold sides, and roll up tightly.
  7. Brush the top with more melted butter and bake for 30–40 minutes until golden brown.
  8. Cool on a wire rack for 5–10 minutes before slicing and serving.
