  • 1 pound cod fillets
  • 1 can 13.5 ounces coconut milk
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F.
  2. In a medium bowl, whisk together the coconut milk, olive oil, lemon juice, lemon zest, garlic, ginger, salt, and black pepper until well combined.
  3. Place the cod fillets in a baking dish and pour the coconut lemon cream sauce over the fish, ensuring the fillets are well coated.
  4. Bake in the preheated oven for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
