  • 4 fillets Cod 1-1.5 inches thick

For the Sauce
  • 1 tablespoon Olive Oil Can substitute with avocado oil
  • 1 medium Onion Chopped; yellow or white preferred
  • 3 cloves Garlic Minced
  • 1 tablespoon Ginger Freshly grated preferred
  • 1 can Coconut Milk Full-fat for richest flavor
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 teaspoon Lemon Zest Fresh preferred

Method
 

Baking Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Season the cod fillets with salt and pepper on both sides.
  3. Heat olive oil in a skillet over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic and grated ginger; stir for 1-2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest; simmer for 5 minutes.
  6. Spread seasoned cod in a baking dish and pour the sauce over it.
  7. Bake in the oven for 20-25 minutes or until the fish flakes easily with a fork.
  8. Let it rest for a few minutes before garnishing with fresh cilantro or parsley and serving.
