Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Scrub the russet potatoes under running water. Dry them well with a towel and poke holes with a fork.
  3. Massage the potatoes with olive oil and season with salt, black pepper, garlic powder, and paprika.
  4. Place the potatoes on the oven rack and bake for 50-60 minutes until tender.
  5. Season the sirloin steak with salt and black pepper, allowing it to sit for a few minutes.
  6. Heat a skillet over medium-high heat, add butter, and cook the steak bites for 3-4 minutes per side.
  7. Remove the baked potatoes from the oven, slice them open, and gently mash the insides.
  8. Top each potato with steak bites and sprinkle with shredded cheddar cheese.
  9. Return the topped potatoes to the oven for an additional 3-5 minutes until the cheese melts.
  10. Garnish with chopped green onions and serve hot.
