For the Bread Base
  • 8 slices Brioche Bread day-old works best
  • 4 large Eggs whole eggs give the best texture
For the Custard Mixture
  • 2 cups Whole Milk can swap with 2% or non-dairy
  • 8 oz Cream Cheese use brick, not whipped
  • 1/4 cup Maple Syrup honey or agave are alternatives
  • 1 teaspoon Vanilla Extract can add other extracts for variety
  • 1/4 teaspoon Kosher Salt balances sweetness
For the Strawberry Layer
  • 2 cups Strawberries fresh strawberries are ideal
For Serving
  • optional Confectioners’ Sugar

Method
 

Preparation
  1. Lightly coat a 9x13-inch baking dish with nonstick spray.
  2. Layer half of the brioche bread cubes on the bottom of the baking dish.
  3. Dot the cream cheese over the bread cubes, followed by half of the fresh strawberries.
  4. Add the remaining brioche bread cubes on top.
  5. In a mixing bowl, whisk together the eggs, whole milk, maple syrup, vanilla extract, and kosher salt.
  6. Pour the custard mixture evenly over the bread layers and let absorb.
  7. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  8. Preheat oven to 350°F (175°C) and let the dish rest at room temperature for 30 minutes before baking.
  9. Cover the dish with aluminum foil and bake for 30 minutes.
  10. Uncover and continue to bake for another 25-30 minutes until golden brown.
  11. Let cool slightly before serving and garnish with remaining strawberries and confectioners' sugar.
