- Fully thaw phyllo dough, cover with a damp towel. Preheat oven to 350°F (175°C).
- Combine cream cheese, Greek yogurt, granulated sugar, cinnamon. Blend until smooth and set aside.
- Brush layers of phyllo dough with melted butter and stack 4 to 5 sheets. Cut into squares.
- Spoon cheesecake filling onto each phyllo square, fold edges over and seal. Repeat until filling is used.
- Place cookies on a parchment-lined baking sheet and bake for 20-25 minutes until golden and crisp.
- Remove cookies from oven and drizzle warm honey over them.
- Cool for a few minutes on the baking sheet, then transfer to a serving platter.
