Ingredients
  

  • 1 pound salmon fillet skin removed and cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon lime juice
  • Chopped green onions for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the panko breadcrumbs, salt, black pepper, garlic powder, and paprika.
  3. In another bowl, whisk the egg until well beaten.
  4. Dredge each salmon cube in flour, shaking off the excess, then dip it into the egg, and finally coat it with the panko mixture, pressing gently to adhere. Place the coated salmon bites on the prepared baking sheet.
  5. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown.
  6. While the salmon bites are baking, prepare the bang bang sauce by mixing together the mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
  7. Once the salmon bites are done, remove them from the oven and let them cool for a couple of minutes. Serve warm with the bang bang sauce drizzled on top or on the side for dipping. Garnish with chopped green onions if desired.
