Cooking Steps
  1. Season the chicken with garlic powder, smoked paprika, oregano, salt, and pepper, then let it sit.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat, brown the chicken on all sides, about 5-7 minutes, then set aside.
  3. Add remaining olive oil to the pot, sauté diced onion, carrot, and red bell pepper for about 5 minutes until softened.
  4. Stir in chopped garlic and cook for 1 more minute until fragrant.
  5. Return the chicken to the pot and add BBQ sauce, drained beans, sweet corn, and chicken stock; mix well.
  6. Bring to a gentle boil, then reduce heat to low and let simmer for about 10 minutes until chicken is cooked through.
