  • 1 tablespoon Nutritional Yeast
  • 1 teaspoon Thyme
  • 1 teaspoon Smoked Paprika

Step-by-Step Instructions
  1. Prepare Tofu: Press the extra-firm tofu for 3-4 hours to eliminate excess moisture. Poke holes and create a crosshatch pattern for marinade absorption.
  2. Marinate: Whisk soy sauce, chili garlic sauce, and spices in a bowl. Place tofu in a bag, pour marinade over it, seal, and refrigerate for at least 24 hours.
  3. First Bake: Preheat oven to 400°F (200°C). Arrange marinated tofu on a lined baking sheet with crosshatch side facing up. Bake for 20 minutes.
  4. Make Glaze: Combine brown sugar and spicy brown mustard in a bowl. Microwave for 15 seconds and stir until smooth.
  5. Glaze and Bake Again: Brush glaze over tofu and bake for an additional 10 minutes. Glaze again and bake for 15-20 minutes until caramelized.
  6. Rest and Serve: Allow tofu ham to rest for 10 minutes, slice, and serve with sides.
