- Preheat your grill to medium-high heat (around 400°F / 200°C) and spray the grates with vegetable oil.
- In a small bowl, combine light brown sugar, cayenne pepper, vanilla extract, and kosher salt. Mix until well blended.
- Slice the fresh pineapple into spears and coat each side with the sugar mixture.
- Grill the coated pineapple spears for 2–3 minutes on each side until caramelized and golden brown.
- Remove the pineapple from the grill and garnish with fresh mint leaves if desired. Serve immediately.
