  2. Break the graham crackers into squares, spread 1 tablespoon of peanut butter filling onto one half, and top with another half to create a sandwich. Repeat until all are assembled.
  3. In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 1 tablespoon of coconut oil. Heat in the microwave, stirring between 20-second intervals until melted and smooth.
  4. Dip each sandwich halfway in chocolate or drizzle on top, letting excess drip back into the bowl. Place on a parchment-lined tray.
