Ingredients

  • 1 lb Ground Chicken A lean protein source
  • 1/2 cup Buffalo Wing Sauce Adjust based on heat preference
  • 1 tsp Garlic Powder Fresh garlic works well for bolder taste
  • 1 tsp Onion Powder Fresh onions can be used if preferred

For the Tacos
  • 8 small Tortillas (Corn or Flour) Lettuce wraps are a low-carb substitute
  • 1 tbsp Cooking Spray or Oil Olive oil is a healthier option
For the Creamy Slaw
  • 2 cups Shredded Cabbage Coleslaw mix can be an alternative
  • 1 cup Grated Carrots Adjust amount to your liking
  • 1/2 cup Ranch Dressing (Greek Yogurt Preferred) Blue cheese can be substituted
  • 2 tbsp Dill Relish Chopped pickles can work as well

Method
 

Preparation
  1. In a large bowl, combine shredded cabbage, grated carrots, ranch dressing, and dill relish. Stir until well-mixed and refrigerate for 30 minutes.
  2. In a separate bowl, combine ground chicken with buffalo wing sauce, garlic powder, onion powder, smoked paprika, Himalayan salt, and black pepper. Mix gently until just combined.
  3. Preheat a non-stick skillet over medium-high heat and lightly grease with cooking spray or oil.
  4. Take portions of the chicken mixture, roll into balls, then smash them down in the skillet to form thin patties. Cook for about 3-4 minutes until golden brown.
  5. Warm the tortillas in the skillet for about 30 seconds on each side until soft.
  6. Assemble the tacos by placing a chicken patty in each tortilla and topping with the ranch slaw.
  7. Serve the assembled tacos immediately while warm.
