Preparation Steps
- Wash and dry the cucumber. Slice thinly into rounds, approx 1/8 inch thick.
- Dice the ripe avocado into bite-sized pieces.
- Chop the green onions, using both white and green parts.
- In a large mixing bowl, combine cucumbers, avocado, green onions, and imitation crab.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar.
- Pour the dressing over the salad and gently toss to coat.
- Cover and chill in the refrigerator for at least 15 minutes.
- Before serving, sprinkle sesame seeds over the salad.
