Method
 

Preparation Steps
  1. Wash and dry the cucumber. Slice thinly into rounds, approx 1/8 inch thick.
  2. Dice the ripe avocado into bite-sized pieces.
  3. Chop the green onions, using both white and green parts.
  4. In a large mixing bowl, combine cucumbers, avocado, green onions, and imitation crab.
  5. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar.
  6. Pour the dressing over the salad and gently toss to coat.
  7. Cover and chill in the refrigerator for at least 15 minutes.
  8. Before serving, sprinkle sesame seeds over the salad.
