  • 2 cups Frozen Mixed Vegetables or any preferred blend
  • 1 medium Diced Onion
  • 1 tbsp Olive Oil can substitute with butter
  • 1/4 cup All-Purpose Flour or gluten-free flour
  • 1 tsp Garlic Powder or 2 cloves fresh garlic
  • 1 tsp Old Bay Seasoning or Cajun/Creole seasoning
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Heavy Cream or half-and-half
  • 1 cup Chicken or Seafood Broth or vegetable broth for vegetarian
For the Biscuit Topping
  • 1 pkg Cheddar Bay Biscuit Mix prepare according to package instructions

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a pie dish or oven-safe skillet with cooking spray.
  2. In a large skillet, heat olive oil over medium and sauté the diced onions for 3-4 minutes until translucent.
  3. Add flour, garlic powder, Old Bay seasoning, salt, and black pepper to the onions and stir for 1-2 minutes until bubbly.
  4. Slowly whisk in heavy cream and broth, stirring until thickens (about 3-5 minutes).
  5. Fold in precooked seafood and mixed vegetables until evenly distributed.
  6. Pour the filling into the prepared dish, spreading it evenly.
  7. Prepare the biscuit dough as per package instructions and fold in shredded cheddar cheese.
  8. Drop spoonfuls of biscuit dough over the filling, spaced slightly apart.
  9. Bake in the preheated oven for 20-25 minutes until biscuits are golden brown.
  10. Let cool for 5 minutes before serving.
