Ingredients
  

  • 2 cups mashed potatoes about 2 large potatoes
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, combine the mashed potatoes, corn, cheddar cheese, breadcrumbs, green onions, egg, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  2. Using your hands, form the mixture into small balls or patties, about 1 to 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.
  3. Heat about 1 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the potato bites in batches, making sure not to overcrowd the pan.
  4. Fry the bites for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
  5. Serve warm with your favorite dipping sauce.
