Ingredients
  

  • 1 cup fresh broccoli florets finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Drizzle the olive oil over the broccoli bites.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes before serving.
