- Preheat the oven to 375°F (190°C).
- In a medium saucepan, melt the butter and olive oil over medium heat. Sauté the onion and garlic for 5-7 minutes.

- Add the poultry seasoning, salt, pepper, and 1 cup of cheddar cheese until melted.
- Cut chicken into bite-sized pieces, season with remaining salt and pepper, and spread in a greased baking dish. Rinse quinoa and add along with broccoli.

- Check doneness, then add remaining cheese on top, switch to broil for 3-5 minutes until bubbly.
