  • 1 cup Dry quinoa uncooked
  • 1 pound Boneless skinless chicken breasts diced
  • 4 cups Broccoli florets

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan, melt the butter and olive oil over medium heat. Sauté the onion and garlic for 5-7 minutes.
  3. Stir in the flour, cooking for 2-3 minutes, then gradually whisk in the chicken broth and milk until thickened.
  4. Add the poultry seasoning, salt, pepper, and 1 cup of cheddar cheese until melted.
  5. Cut chicken into bite-sized pieces, season with remaining salt and pepper, and spread in a greased baking dish. Rinse quinoa and add along with broccoli.
  6. Pour cheese sauce over the mixture and stir gently to combine.
  7. Cover with foil and bake for 45 minutes. Stir halfway through baking.
  8. Check doneness, then add remaining cheese on top, switch to broil for 3-5 minutes until bubbly.
  9. Let cool for 5 minutes before serving.
