- Preheat the oven to 375°F (190°C) and spray a baking dish with cooking spray.
- Wash and slice a fresh cauliflower head into thin, even slices.
- Arrange half of the cauliflower slices in the greased baking dish. Sprinkle half of the shredded Swiss Gruyere cheese and half of the green onions. Season with salt and black pepper.
- Layer the remaining cauliflower slices and pour the heavy cream over the layers. Top with the remaining cheese.
- Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 40 minutes until golden and bubbly.
- Let sit for 5 minutes before serving.
