  3. Roll the mixture into golf ball-sized puffs and set aside.
  4. In a shallow dish, beat the eggs. In another, place the breadcrumbs. Spray the breadcrumbs with cooking spray.
  5. Dip each potato ball in the egg, then coat with breadcrumbs. Place on the baking sheet.
  6. Bake for about 25 minutes or until golden brown and crispy.
  7. Cool for a few minutes before serving with sour cream or marinara sauce.
