  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon adjust to taste or substitute with nutmeg
  • 1/2 teaspoon Salt sea salt preferred
For the Mix-ins
  • 1 cup Seedless Raisins or chocolate chips
  • 2 cups Rolled Oats certified gluten-free

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or grease it.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well incorporated and the batter is smooth.
  4. In a separate bowl, whisk together gluten-free flour blend, baking soda, ground cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until combined, forming a thick dough.
  6. Gently fold in the rolled oats and raisins until evenly distributed.
  7. Drop heaping spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake in the preheated oven for 9-11 minutes or until the edges are golden brown.
  9. Let cookies cool on the baking sheet for 1-2 minutes before transferring to a wire rack to cool completely.
