Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken sausage sliced
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 2 cups broccoli florets
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Method

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  2. Stir in the orzo pasta and cook for 1-2 minutes, allowing it to toast slightly.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes, or until the orzo is tender and most of the liquid is absorbed.
  4. Add the broccoli florets, garlic powder, onion powder, salt, and pepper. Stir to combine, cover, and cook for an additional 5 minutes, or until the broccoli is tender.
  5. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
  6. Serve warm, garnished with fresh parsley.
