- Preheat the oven to 375°F (190°C).
- Halve the peaches and remove the pits. Place cut-side up in a baking dish.
- In a bowl, combine granulated sugar, brown sugar, and ground cinnamon.
- Melt the unsalted butter and drizzle over the peach halves, then add vanilla extract.
- Sprinkle the cinnamon-sugar mixture evenly over the peaches.
- Drizzle lemon juice and add a pinch of salt over the peaches.
- Cover loosely with aluminum foil and bake for 25 to 30 minutes.
- Remove foil during the last 5 minutes to crisp the topping.
- Let cool slightly before serving warm with optional toppings.
