Step-by-Step Instructions

  2. Add minced garlic and freshly grated ginger, cooking for an additional minute until fragrant.
  3. Stir in curry powder and turmeric, cooking for 1-2 minutes to bloom the spices.
  4. Pour in coconut milk and vegetable broth, stirring well. Increase heat to a gentle simmer.
  5. Incorporate diced carrots and potatoes, allowing the soup to simmer uncovered for about 15 minutes.
  6. In a separate bowl, mix flour, baking powder, and a pinch of salt. Gradually add water until a soft, sticky dough forms.
  7. Add fresh spinach, soy sauce, salt, and black pepper to the soup, stirring until spinach wilts.
  8. Drop spoonfuls of dumpling dough into the pot, cover, and steam for 10-12 minutes.
