Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
Carefully place the cod fillets into the skillet, spooning some of the sauce over the top.
Cover the skillet and let the cod cook for about 8-10 minutes, or until it flakes easily with a fork.
Once cooked, remove from heat and garnish with fresh parsley before serving.
