Ingredients
  

  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 jar 12 ounces roasted red peppers, drained and chopped
  • 1 cup vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped roasted red peppers, vegetable broth, smoked paprika, and dried oregano to the skillet. Season with salt and pepper.
  5. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.
  6. Carefully place the cod fillets into the skillet, spooning some of the sauce over the top.
  7. Cover the skillet and let the cod cook for about 8-10 minutes, or until it flakes easily with a fork.
  8. Once cooked, remove from heat and garnish with fresh parsley before serving.
