Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease your baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Transfer the meat mixture to the baking dish and press evenly into the bottom. Bake uncovered for 20–25 minutes until browned.
  4. While the meatloaf bakes, warm mashed potatoes in a saucepan, stir in sour cream and butter, and season to taste.
  5. Spread creamy mashed potatoes evenly over the meatloaf when done. Smooth with a spatula.
  6. Sprinkle shredded cheddar cheese on top and bake for an additional 10–15 minutes until cheese is melted and bubbly.
  7. Let the dish rest for 5–10 minutes before slicing. Garnish with parsley if desired.
