Ingredients

  • 1 cup plain Greek yogurt
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup mini chocolate chips
  • 1/4 teaspoon salt

Method

  1. In a mixing bowl, combine the Greek yogurt, almond butter, honey, and vanilla extract. Stir until smooth and well combined.
  2. Add the rolled oats, mini chocolate chips, and salt to the mixture. Fold gently until all ingredients are evenly distributed.
  3. Using a tablespoon, scoop the mixture and form small bite-sized balls. Place them on a parchment-lined baking sheet.
  4. Once all the mixture is formed into bites, place the baking sheet in the freezer for about 1 hour to firm up.
  5. After freezing, transfer the bites to an airtight container and store them in the freezer for up to 2 months. Enjoy them straight from the freezer or let them sit for a few minutes to soften slightly before eating.
