Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan.
  2. Blend cottage cheese in a food processor until smooth and creamy, about 2–3 minutes.
  3. Mix in granulated sugar, honey or maple syrup, and vanilla extract until smooth. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk together cocoa powder, flour, and baking powder.
  5. Fold dry ingredients into wet ingredients just until combined, being careful not to overmix.
  6. Fold in chocolate chips if desired.
  7. Pour batter into prepared pan, spreading it evenly, and tap the pan to release air bubbles.
  8. Bake for 25-30 minutes. Check for doneness with a toothpick.
  9. Let cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
