- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan.
- Blend cottage cheese in a food processor until smooth and creamy, about 2–3 minutes.
- Mix in granulated sugar, honey or maple syrup, and vanilla extract until smooth. Add eggs one at a time, mixing well after each.
- In a separate bowl, whisk together cocoa powder, flour, and baking powder.
- Fold dry ingredients into wet ingredients just until combined, being careful not to overmix.
- Fold in chocolate chips if desired.
- Pour batter into prepared pan, spreading it evenly, and tap the pan to release air bubbles.
- Bake for 25-30 minutes. Check for doneness with a toothpick.
- Let cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
