In a mixing bowl, combine the cottage cheese and egg, and whisk until smooth.
Add the flour, baking powder, salt, garlic powder, and oregano to the bowl. Mix until a dough forms.
Knead the dough on a lightly floured surface for about 1-2 minutes until it is smooth.
Divide the dough into 4 equal pieces and shape each piece into a ball.
Flatten each ball into a disc about 1/4 inch thick.
Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
Cook each flatbread for 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
Remove from the skillet and let cool slightly before serving.
