  • 1 cup fresh raspberries can substitute with thawed frozen raspberries (drain excess water)
  • 2 tablespoons honey or maple syrup can replace with stevia or agave syrup and adjust quantity to taste
  • 1 teaspoon vanilla extract optional, but highly recommended for best flavor

Preparation Steps
  1. In a blender or food processor, combine cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend on high speed for about 1-2 minutes until smooth and creamy.
  2. Spoon the mixture evenly into serving glasses, aiming for about 1/2 cup per serving, and gently shake the glasses to settle the mousse.
  3. Place the filled glasses in the refrigerator for at least 1 hour to chill and allow the flavors to meld.
  4. Garnish each glass with additional fresh raspberries and a sprig of mint before serving.
