- In a blender or food processor, combine cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract. Blend on high speed for about 1-2 minutes until smooth and creamy.
- Spoon the mixture evenly into serving glasses, aiming for about 1/2 cup per serving, and gently shake the glasses to settle the mousse.
- Place the filled glasses in the refrigerator for at least 1 hour to chill and allow the flavors to meld.
- Garnish each glass with additional fresh raspberries and a sprig of mint before serving.
