Ingredients

  • 1 cup cottage cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil for cooking
  • Fresh herbs like chives or parsley, optional for garnish

Method

  1. In a mixing bowl, combine the cottage cheese and egg. Whisk until well blended.
  2. Add the almond flour, salt, black pepper, garlic powder, and onion powder to the bowl. Mix until a smooth batter forms.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Pour about 1/4 cup of the batter into the skillet, spreading it into a thin circle. Cook for 2-3 minutes or until the edges start to lift and the bottom is golden brown.
  5. Carefully flip the wrap and cook for an additional 1-2 minutes until the other side is golden.
  6. Remove the wrap from the skillet and repeat with the remaining batter, adding more oil to the skillet as needed.
  7. Serve warm, garnished with fresh herbs if desired.
