Step-by-Step Instructions
  1. Start by mincing three cloves of fresh garlic and squeezing the juice from two lemons into a bowl, setting the juice aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season 4 boneless chicken breasts with salt and pepper, then sear the chicken for about 4-5 minutes on each side until golden brown.
  3. Transfer the seared chicken to the crockpot. Sprinkle the minced garlic and about 3 tablespoons of capers over the chicken, then pour in 1 cup of low-sodium chicken broth and the reserved lemon juice.
  4. Sprinkle 2 teaspoons of Italian seasoning over the mixture, cover the crockpot, and set to low heat for 6 hours or high heat for 3 hours.
