  • 3 tablespoons soy sauce or coconut aminos for gluten-free

  • 1 medium carrot diced
  • 1 medium bell pepper diced
  • 1 medium onion diced, both white and green parts
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • to taste chili flakes
For the Protein
  • 2 large chicken breasts or extra firm tofu/tempeh for vegetarian option
For the Noodles
  • 4 ounces ramen noodles or substitute with rice or zucchini noodles
For Garnishing
  • 1/4 cup green onions chopped

Method
 

Cooking Steps
  1. Heat the oil in a large pot over medium-high heat until shimmering.
  2. Sauté the carrot, bell pepper, garlic, ginger, and chili flakes for about 3 minutes until softened and fragrant.
  3. Add the broth and chicken to the pot. Bring to a simmer, cover, and cook for 10-15 minutes.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add the ramen noodles and cook for about 3 minutes until al dente.
  6. Stir in green onions and soy sauce, adjust seasoning as desired.
  7. Serve hot, garnished with extra green onions and a lime slice.
