Step-by-Step Instructions for Apple Curd
- Begin by peeling and chopping 3 cups of your chosen apples into ½ inch pieces and place them in a medium saucepan.
- In the saucepan, add 1 tablespoon of fresh lemon juice and 2 tablespoons of water to the chopped apples. Cover and simmer over medium-low heat for 15-20 minutes, stirring occasionally until tender.
- Transfer the apple mixture to a blender or food processor and blend on high until smooth, about 1-2 minutes.
- Pour the blended apples through a metal sieve back into your saucepan to achieve a smooth, creamy texture.
- Place the saucepan over low heat and add 1 tablespoon of cornstarch, ¼ cup of brown sugar, and 3 tablespoons of dairy-free butter. Stir continuously until thickened, about 3-5 minutes.
- Remove from heat and mix in a pinch of sea salt, 1 teaspoon of vanilla extract, and if desired, ½ teaspoon of cinnamon.
- Allow the Apple Curd to cool in the saucepan for about 5 minutes before transferring to a container.
- Transfer your silky Apple Curd into a sealable container and refrigerate to thicken further for up to 2 weeks.

Notes
Use sweet apples like Gala or Honeycrisp for the best flavor. Adjust sweetness according to apple variety. Chill overnight for a thicker consistency.
