  • 2 tablespoons Cajun Seasoning Mix Store-bought or homemade
  • 2 tablespoons Olive Oil For marinating
  • 2 tablespoons Grass Fed Butter For searing the chicken
For the Rice
  • 2 cups Long-Grain Rice Day-old works best
  • 1 medium Red Onion Finely chopped
  • 3 cloves Garlic Cloves Freshly minced
For the Cream Sauce
  • 1 cup Milk Warmed
  • 4 ounces Light Cream Cheese For a creamy texture
  • 1/2 cup Parmesan Grated
Spices & Seasoning
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Chili Powder
For Garnish
  • 2 tablespoons Fresh Parsley Chopped

Method
 

Instructions
  1. In a large bowl, combine chicken breasts with Cajun seasoning and olive oil. Marinate for at least 30 minutes or overnight for best flavor.
  2. Heat a skillet over medium-high heat; melt butter and sear marinated chicken for 5–7 minutes on each side until golden brown and cooked through.
  3. In the same skillet, sauté red onion and minced garlic for 2–3 minutes. Add remaining Cajun seasoning and day-old rice, mixing until heated through.
  4. Lower heat, melt additional butter, whisk in milk, and add cream cheese and Parmesan until smooth.
  5. Serve the Cajun rice on plates, top with sliced chicken, and pour creamy sauce over. Garnish with parsley.
