Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. Slice each chicken breast in half horizontally to create uniform cutlets.
  3. Marinate chicken with olive oil, minced garlic, Italian seasoning, salt, and pepper for 15 to 30 minutes.
  4. Sauté fresh spinach for 2 to 3 minutes over medium heat until wilted.
  5. Beat the cream cheese until smooth, then fold in the cooled spinach and half of the mozzarella cheese.
  6. Layer marinated chicken in the baking dish, spread spinach mixture over it, and top with remaining mozzarella.
  7. Bake for 20 to 30 minutes until cheese is bubbly and chicken is cooked to 165°F (75°C).
  8. Let the casserole rest for about 5 minutes before serving.
