- In a large pot, melt 2 tablespoons of unsalted butter over medium heat. Add 1 chopped yellow onion and 1 diced poblano pepper, along with half of the seasoning blend. Sauté for 5-6 minutes until vegetables are soft and slightly browned.

- Stir in 3 cups of shredded chicken, 1 can of black beans (drained), and 2 cups of frozen corn. Pour in 4 cups of chicken broth and add the remaining seasoning blend. Increase heat to medium-high and bring to a gentle simmer.

- Allow to simmer uncovered for about 15 minutes, stirring occasionally.

- Lower the heat and gradually stir in 1 cup of heavy cream and 1 cup of cheese. Keep stirring until cheese is melted and soup is creamy.

- Simmer for an additional 15 minutes. Taste and adjust seasoning with lime juice, salt, and pepper before serving.
