For Creaminess
  • 1 cup Heavy Cream Can substitute with half & half or coconut milk.
  • 1 cup Shredded Cheese Cheddar, Mexican blend, or Colby Jack works beautifully.
For Seasoning
  • 1 tablespoon Seasoning Blend Includes garlic powder, onion powder, chili powder, oregano, salt, pepper, and cumin.
  • 1 tablespoon Lime Juice Freshly squeezed is best.
  • 1/4 cup Fresh Chopped Cilantro Optional garnish.

Step-by-Step Instructions
  1. In a large pot, melt 2 tablespoons of unsalted butter over medium heat. Add 1 chopped yellow onion and 1 diced poblano pepper, along with half of the seasoning blend. Sauté for 5-6 minutes until vegetables are soft and slightly browned.

  2. Stir in 3 cups of shredded chicken, 1 can of black beans (drained), and 2 cups of frozen corn. Pour in 4 cups of chicken broth and add the remaining seasoning blend. Increase heat to medium-high and bring to a gentle simmer.

  3. Allow to simmer uncovered for about 15 minutes, stirring occasionally.

  4. Lower the heat and gradually stir in 1 cup of heavy cream and 1 cup of cheese. Keep stirring until cheese is melted and soup is creamy.
