Step-by-Step Instructions
  1. Begin by roasting a few cloves of garlic in a skillet over medium heat for about 5 minutes, until they are golden brown and fragrant.
  2. Chop the chipotle peppers from the adobo sauce finely.
  3. In a blender, combine roasted garlic, sour cream, mayonnaise, chopped chipotles, and a splash of adobo sauce.
  4. Add fresh lime juice, smoked paprika, ground cumin, and salt to taste. Blend on high for 30 to 60 seconds until smooth and creamy.
  5. Taste and adjust for more heat or flavors as needed.
  6. If too thick, blend in olive oil or a teaspoon of water gradually.
  7. Transfer to a glass jar or airtight container and refrigerate for at least 30 minutes.
