Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes until browned and no longer pink. Remove and set aside.
  2. In the same skillet, add minced garlic and stir for about 30 seconds. Pour in lime juice and chicken broth. Simmer for 1-2 minutes while scraping the bottom of the pan.
  3. Stir in chopped cilantro, heavy cream, and milk. Bring to a gentle boil, then reduce heat. Add shredded cheese, whisking until melted and smooth, about 2-3 minutes.
  4. Bring a pot of salted water to a boil. Cook spaghetti according to package instructions. Reserve a cup of pasta water before draining.
  5. Add drained spaghetti to the skillet with sauce. Toss to coat. Mix in half of the cooked chicken. Adjust sauce consistency with reserved pasta water. Season to taste.
  6. Garnish Chicken Pasta with remaining chicken and cilantro. Serve immediately.
