Method

Instructions for Mousse
  1. Strain 1 cup of full-fat cottage cheese through a fine mesh sieve for 1-2 minutes to remove excess liquid.
  2. Clean your food processor or blender and assemble your ingredients.
  3. Add the strained cottage cheese, 1/2 cup creamy natural peanut butter, 2 tablespoons honey or maple syrup, 1 teaspoon vanilla extract, and a pinch of salt into the food processor.
  4. Blend the mixture on high speed for 45-60 seconds or until smooth.
  5. Check the texture; if too thick, gradually add 1-2 tablespoons of milk until desired consistency is achieved.
  6. Transfer the mousse to a bowl, cover, and refrigerate for 15-20 minutes to allow flavors to meld.
  7. Portion the mousse into 2-4 small bowls or jars, about 1/4 to 1/2 cup each.
  8. Garnish with chopped peanuts, dark chocolate chips, or fresh fruit if desired.
