Cooking Steps
  1. In a large pot, heat 2 tablespoons of butter over medium heat until melted. Add 1 diced onion and sauté for about 3-4 minutes until translucent.
  2. Stir in 3 cloves of minced garlic and continue to cook for an additional 1-2 minutes.
  3. Pour in 4 cups of chicken broth and bring to a gentle simmer.
  4. Reduce heat to low and stir in 1 cup of heavy cream. Warm through for about 5 minutes.
  5. Mix in 2 cups of shredded cooked chicken and 1 packet of ranch seasoning mix, stirring well. Let simmer for 5-10 minutes.
  6. Stir in 1 cup of shredded cheddar cheese and 4 ounces of cream cheese until melted.
  7. Add in 1 cup of crumbled cooked bacon and gently fold into the soup.
  8. Taste and adjust seasoning, then sprinkle in chopped green onions before serving.
