  • 3 cups low-sodium beef broth
For the Beef
  • 1 lb ground beef Can substitute with ground turkey or chicken
  • 1 small diced onion Shallots can be used instead
  • 4 cloves minced garlic Adjust if you're not a garlic fan
For the Cheese Sauce
  • 1/2 cup milk Can use broth for lighter version
  • 1 cup shredded cheddar Any melting cheese works
  • 1/2 cup grated Parmesan Pecorino Romano is a great substitute
  • 3 tbsp butter Olive oil can replace for dairy-free
Seasonings
  • 1 tsp Italian seasoning Oregano and basil can replace
  • Salt and pepper As needed for seasoning
For Garnish
  • Fresh parsley Optional garnish

Method
 

Step-by-Step Instructions
  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion, cooking for 3-4 minutes until soft and translucent.
  2. Add the ground beef to the pan, breaking it apart as it cooks. Cook for about 5-7 minutes until browned.
  3. Stir in the minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the uncooked rice, beef broth, Italian seasoning, and season with salt and pepper. Bring to a boil, then simmer for 18-20 minutes.
  5. In a separate saucepan, melt 2 tablespoons of butter over low heat. Stir in cheddar and Parmesan cheese along with milk until smooth.
  6. Remove the skillet from heat, pour cheese sauce over beef and rice mixture, stirring to combine.
  7. Serve warm, garnished with parsley if desired.
