  • 1 medium Cucumber Seedless variety preferred
  • 1 cup Greek Yogurt Dairy-free yogurt can be used
  • 2 tablespoons Chopped Dill Fresh preferred, dried is a substitute
  • 1 tablespoon Olive Oil Can substitute with a light oil
  • 1 tablespoon Chopped Parsley Omit if necessary
  • 1 clove Minced Garlic Adjust amount to taste
  • 1/2 medium Lemon Juice Fresh juice is ideal
  • to taste Salt and Pepper Use sea salt for gourmet touch

Method
 

Preparation Steps
  1. Wash one cucumber, slice lengthwise, scoop out seeds, dice or shred to make about one cup, and drain excess liquid for 10 minutes.
  2. In a bowl, combine the drained cucumber with Greek yogurt, dill, olive oil, parsley, minced garlic, and lemon juice. Stir well.
  3. Taste and adjust seasoning with more garlic, salt, and pepper as desired. Mix again.
  4. Cover tightly and refrigerate for at least 30 minutes to meld flavors.
