  • 1 cup Heavy Cream Can use half-and-half for a lighter option
  • 1/2 cup Parmesan Cheese Grated
  • 1 tablespoon Lemon Zest Fresh is preferable
  • 1 tablespoon Lemon Juice Freshly squeezed
To Season and Garnish
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Red Pepper Flakes Optional
  • 2 tablespoons Fresh Parsley Chopped, for garnish

Equipment

  • large pot
  • Skillet
  • measuring cups

Method

Step-by-Step Instructions
  1. Start by filling a large pot with water and bringing it to a rolling boil over high heat. Once boiling, add salt.
  2. Gently add your choice of pasta into the boiling water and cook according to package instructions, usually about 8–10 minutes. Stir occasionally. Reserve one cup of pasta water before draining.
  3. Season the salmon fillet with salt, pepper, and lemon juice. Heat olive oil in a skillet over medium-high heat, then add salmon and cook for 4-5 minutes per side until golden brown. Flake the salmon into bite-sized pieces.
  4. Lower the heat in the same skillet and sauté minced garlic until fragrant, about 30 seconds.
  5. Add fresh spinach to the skillet and stir continuously until wilted, about 2-3 minutes.
  6. Pour in heavy cream, add Parmesan cheese, and let it melt to create a creamy sauce. Cook an additional 2-3 minutes until the sauce thickens slightly.
  7. Gently add cooked pasta and flaked salmon into the sauce, tossing to coat everything evenly. Add reserved pasta water if necessary.
  8. Plate the creamy pasta, garnish with fresh parsley, and serve hot.
