Ingredients

For the Mousse
  • 1 block Silken Tofu This silky base provides the mousse's creamy texture and is high in protein.
  • 0.5 cup Smooth Peanut Butter Rich in flavor; swap with any nut or seed butter if desired.
  • 0.33 cup Agave Syrup Acts as a natural sweetener; maple syrup works well as an alternative.
  • 1 teaspoon Vanilla Paste or Extract Enhances the overall flavor beautifully.
  • 1 pinch Salt Balances sweetness perfectly.
For the Ganache
  • 1 cup Dark Chocolate Chips Opt for 70% cocoa or higher for a deep chocolate flavor.
  • 0.5 cup Full-Fat Coconut Milk Use only the solidified cream from the fridge for best results.

Equipment

  • High-speed blender
  • microwave-safe bowl
  • ramekins

Method

Step-By-Step Instructions for Vegan Peanut Butter Mousse
  1. In a high-speed blender, combine one block of silken tofu, ½ cup of smooth peanut butter, ⅓ cup agave syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Blend on high for about 1-2 minutes until completely smooth.
  2. Spoon the mousse into individual ramekins or jars, cover, and refrigerate for at least 30 minutes to allow the mousse to set.
  3. In a microwave-safe bowl, melt 1 cup of dark chocolate chips using short intervals, stirring every 15 seconds until smooth. Mix in ½ cup of the solidified cream from a can of full-fat coconut milk until glossy.
  4. Once the mousse has set, pour the chocolate ganache over each mousse portion to create an even layer. Chill again for at least 1 hour.
  5. Serve the mousse cold, garnished with desired toppings such as crushed nuts or sea salt.
