- Finely chop 1 cup of broccoli and shred 1 cup of carrots. Set them aside.
- In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped broccoli, shredded carrots, and 2 teaspoons of minced garlic. Sauté for about 5 minutes until the vegetables soften.
- Pour in 1 cup of orzo and 2 cups of chicken broth. Bring to a gentle boil, then lower the heat and simmer for 10–15 minutes until orzo is tender and broth is mostly absorbed.
- Reduce heat to low and stir in 1 ounce of cream cheese and 1/2 cup of Parmesan cheese until melted, creating a rich, creamy texture. Allow to cool slightly before serving.
