Ingredients
  

  • 2 medium zucchinis spiralized into noodles
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and Italian seasoning, mixing until the cheese is melted and the sauce is smooth.
  4. Add the spiralized zucchini noodles to the skillet and toss to coat them in the sauce. Cook for 2-3 minutes until the noodles are tender but still slightly crisp.
  5. Return the cooked chicken to the skillet and toss everything together until heated through.
  6. Serve immediately, garnished with fresh parsley.
