Method

Preparation
  1. In a small bowl, whisk together ¼ cup of extra virgin olive oil, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, and 2 tablespoons of soy sauce for your flavorful dressing. Grate 1 teaspoon of fresh ginger and add it along with 1 tablespoon of honey. Mix until uniform and the honey is fully dissolved. Set this vibrant dressing aside.
  2. Using a sharp knife, slice approximately 10 mini sweet bell peppers into thin rings and chop 2 Persian cucumbers into bite-sized pieces. Place these beautiful, crunchy vegetables in a large mixing bowl, ensuring they are well combined.
  3. Pour the prepared sesame ginger dressing over the sliced bell peppers and cucumbers in the mixing bowl. Gently toss the salad ingredients together, making sure every piece is coated with the dressing.
  4. Taste your Cucumber and Sweet Pepper Salad and drizzle a few drops of chili oil for an added kick, if desired, and sprinkle in some Everything But The Bagel Seasoning. Toss gently once more to incorporate these final touches.
  5. Serve your Cucumber and Sweet Pepper Salad immediately for the freshest taste, or chill it in the refrigerator for about 10-15 minutes to allow the flavors to blend beautifully.
