Ingredients
  

  • 1 pound salmon fillet skin removed and cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • 1/2 cup mayonnaise for Bang Bang sauce
  • 2 tablespoons sweet chili sauce for Bang Bang sauce
  • 1 tablespoon sriracha adjust for spice preference, for Bang Bang sauce
  • 1 teaspoon lime juice for Bang Bang sauce

Method
 

  1. Heat vegetable oil in a large skillet over medium-high heat, about 1/4 inch deep.
  2. In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper.
  3. In another bowl, beat the eggs.
  4. In a third bowl, place the panko breadcrumbs.
  5. Coat each salmon cube first in the flour mixture, shaking off excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs.
  6. Press the breadcrumbs onto the salmon to ensure they stick well.
  7. Once the oil is hot, carefully add the salmon bites in batches, making sure not to overcrowd the pan.
  8. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
  9. Remove and place on a paper towel-lined plate to drain excess oil.
  10. While the salmon bites are frying, prepare the Bang Bang sauce by whisking together mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
  11. Adjust the sriracha to taste for desired spiciness.
  12. Serve the crispy salmon bites hot with the Bang Bang sauce drizzled on top or on the side for dipping.

Notes
